Cozy and Quick White Chicken Chili Recipe

This simple white chicken chili recipe aims for a velvety texture and rich flavor with only a few ingredients. What is our strategy?  

Squish some of the beans against the soup pot with the back of a spoon. For added taste, add ground chicken, spicy spices, and canned green chiles. 

This recipe can be made with any canned white bean or a combination of them, but Great Northern or navy beans have the finest flavor. 

Cannellini beans, often known as white kidney beans, have tougher bodies that do not dissolve as quickly in soup. 

In this dish, we use ground dark meat since it has more flavor than white meat and is easier to deal  

with (and usually less expensive) than a rotisserie chicken or other cooked and shredded chicken parts. 

A bowl of chili isn't complete without a slew of toppings. But for this recipe, we think omitting the shredded cheddar or Monterey Jack cheese  

and tortilla chips and replacing them with a dollop of sour cream, a few corn chips (Fritos are our favorite), a squeeze of lime juice,  

and some chopped fresh cilantro would be preferable. Still, we wouldn't say no if you wanted to up the ante by serving the chili on top of fried cornbread. 

Melt 3 tablespoons unsalted butter and 2 tablespoons extra-virgin olive oil in a large Dutch oven or other heavy pot over medium-high heat. 1
